Sugar and Spice
Cake thats just right!

Delight friends and family with this delicious spiced treat!
Apples, dates , cinnamon spices and a cream cheese icing topped with walnuts make for a moist sweet cake that melts in your mouth.



Cake Ingredients

3/4 cup peeled and grated apples
1 1/2 cups snipped pitted dates
4 tbl. water
3/4 cup softened butter
1/2 granulated sugar
1/2 packed brown sugar
1 tsp. vanilla
3 eggs
2 1/2 cups all-purpose flour
1 1/2 tsps. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1 1/2 cups buttermilk
1/4 cup honey

Cream Cheese Icing

4 oz. cream cheese
1/3 cup butter
1/2 tsp. vanilla
1 tbl. milk
3 cups powdered sugar
1/3 coarsely chopped walnuts

To make Sugar and Spice Cake:

Preheat oven at 350. Grease and flour two 9" cake pans; Set aside.
Snip dates into small pieces in a small bowl, add 4 tbls. water and set aside for about 15 minutes, then drain. Meanwhile, also in a small bowl; peel and grate apples; Set aside.
In a medium bowl combine dry ingredients, flour, baking powder,baking soda and spices; set aside.
In a large mixing bowl, cream butter with an electric mixer on medium speed for 30 seconds, add sugar, brown sugar and vanilla; continue beating until creamed well. Beat in eggs one at a time mixing well after each.
Measure out buttermilk in a small mixing bowl or 2 cup measuring cup then add 1/4 cup honey, stir until disolved; Set aside.
Add flour mixture to creamed mixture alternately with the buttermilk honey mixture; beat well and until fully incorporated. Stir in apples and dates.
Divide batter into cake pans, bake for 25-30 minutes or until a toothpick comes out clean.
Cool in pans for 10 minutes before removing and cooling completely.

To make Icing:

In a medium mixing bowl, beat with an electric mixer on meduim-high speed, cream cheese, butter, milk and vanilla until smooth (about 2 minutes). Add powdered sugar and continue beating for additional 2 minutes. When cake is completely cooled, frost and assemble cake, top with walnuts if desired. Enjoy! Serves 12.
