Delightfully Simple Strawberry Shortcake

Strawberry season!

In my family that means Grandma Soule's absolutely wonderful and simple strawberry shortcake with deliciously sweet strawberry whip.



Ingredients

***Biscuit***

2 1/3 cups bisquick mix
1/2 cup milk
3 tablespoons sugar
3 tablespoons butter, softened

***Filling***

3 cups strawberries, sliced
1 cup sugar
1 egg white

Preheat oven to 425 degrees. In a medium sized bowl, combine bisquick mix, milk, sugar, and butter. Mix until a soft dough forms. Shape dough into six shortcakes and place on an ungreased cookie sheet.

Bake the shortcakes for 10 to 12 minutes, until golden brown.

While shortcakes are baking, combine 1 cup strawberries, 1 cup sugar, and egg white in a small bowl. Beat ingredients until whip forms, about 8 - 10 minutes.

Split shortcakes in half. On bottom half place whip and fresh, sliced strawberries, add other half of shortcake and top with strawberries and whip.

Makes six shortcakes. Easy, sweet, delicious!

Note: This recipe uses a raw egg white. My family has been using this recipe for generations with no ill effects - however there may be a risk of salmonella infection from eating the raw egg white. See this Published Medical Journals Website for more information about salmonella infection risks.
