Brighten your day! These orangy delights are yummy anytime.



Ingredients

2 1/2 cups all-purpose flour
1 cup quick-cooking oatmeal
1/2 cup sugar
3 tsps. baking powder
1 Tbl. plus 2 tsps. grated orange peel
1/2 tsp. salt
2/3 cups cold butter
2 eggs, beaten
1/3 cup chopped canned manderine oranges
(or use fresh orange but remove membrane from each slice.)
1/3 cup half-and-half
2-3 Tbls. orange juice
2 Tbls. sugar

Pre-heat oven at 400 degrees F. Grease large cookie sheet; set aside. In a large bowl, mix flour, oats, sugar, baking powder, salt, and orange peel. Cut in cold butter with a fork or pastry blender until crumbly. Stir in beaten eggs, chopped oranges and half- and- half until dough leaves sides of bowl.

On a floured surface, knead dough about 10 times.Divide dough in half. On cookie sheet roll each half of dough into a 7 inch rounds, 1/2 inch thick. Cut into 6 to 8 wedges with a sharp knife, keeping wedges together. Brush with orange juice; sprinkle with sugar.

Bake for 15 to 20 minutes or until golden brown. Immediately remove from cookie sheet; carefully separate wedges. Serve warm or cool, makes 12-16 wedges. Enjoy!
