Rolls and Muffins to bake for!

Izzy's Favorite Cinnamon Rolls



Wake up and smell the cinnamon!

Image waking up to these nice, warm, freshly baked breakfast treats. These cinnamon rolls are my daughter Izzy's favorite...and she loves cinnamon rolls.

Ingredients

½ cup warm water
2 pkgs. dry yeast
1 ½ cups lukewarm milk
½ cup sugar
2 teaspoons salt
2 eggs
½ cup shortening
7-7 ½ cups flour, sifted
2 tablespoons melted butter
½ cup sugar
2 teaspoons cinnamon
¼ cup finely chopped pecans (optional)

Icing

1/2 (8 oz.) package cream cheese
1/4 cup butter, softened
1 cup powder sugar
1 teaspoon vanilla extract
2 teaspoons milk

Add yeast, milk and sugar to warm water in mixing bowl, stir to dissolve. Stir in salt, eggs, shortening and about 3 ½ cups flour. Mix with wooden spoon until smooth. Add enough remaining flour, half a cup at a time, just so you are able to easily handle it. For lighter, flakey rolls, keep the dough soft as possible, almost sticky. Mix with hands.

Turn mixture onto floured board and knead until smooth and elastic. Place dough in a large greased bowl and cover with a damp cloth. Let rise in a warm place until about doubled in size (1 ½ hours). Punch down and let rise again (about 30 minutes).

Roll out dough in portions to about 3/8 inch thickness. Brush with melted butter; sprinkle with mixture of cinnamon, sugar, and pecans. Roll up dough and slice off rolls about ¾ inches thick. Place rolls in ungreased pans, close together, and let rise. Bake at 375 for 20 minutes. Combine sugar, milk, and vanilla for icing. When cooled, smooth icing over top of rolls.

As with all our rolls and muffins, you can enjoy these for breakfast or as a dessert!
