Walnut Raspberry Fruit Bars


From the kitchen of Nancy Hink, these wonderful walnut raspberry fruit bars are a sure crowd pleaser. The original recipe is a delicious Walnut Cherry Fruit Bar.



Ingredients

***Crust***

1 cup walnuts, divided
1 1/4 unsifted flour
1/2 cup packed brown sugar
1/2 cup packed flake coconut
1/2 cup butter (original recipe calls for butter flavored crisco)

***Filling***

1 8 oz. package cream cheese
1/3 cup sugar
1 egg
1 teaspoons vanilla extract
1 21 oz. raspberry pie filling

Preheat oven to 350 degrees. Grease bottom of 13"x 9" pan. Coursely chop 1/2 cup of walnuts and set aside. Chop remaining walnuts finely.

For Crust: Combine flour and brown sugar. Cut in butter until you have fine crumbs. Add 1/2 cup finely chopped nuts and coconut and mix together. Set aside 1/2 cup of the mixture. Press remaining crumbs in bottom of pan. Bake at 350 degrees for 12 to 15 minutes until lightly browned. Let cool.

For Filling: Beat together cream cheese, sugar, egg and vanilla until smooth. Spread over crust and bake for 10 minutes. Spread pie filling, nuts and remaining crumbs over top. Bake 15 minutes.

Cool before cutting into bars. Makes about 24 bars.

Note: The original recipe calls for cherry pie filling. At my house we enjoy the raspberry filling. Blueberry pie filling would be delicious as well.
