Ride'm Ranger Cookies
You can call them Ranger Cookies, Cowboy Cookies, or Monster Cookies! These cookies are soft and chewy...delightful by any name. A real old fashioned treat!
Ingredients
1/2 cup shortening
1/2 cup butter
3/4 cup sugar
3/4 cup dark brown sugar
2 eggs
1 teaspoon vanilla
2 cups oats
2 1/4 cup flour
1 teaspoon soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1 cup raisins
1 cup nuts
1 cup coconut
Note: You can use chocolate chips in place of raisins if desired.
Preheat oven to 375 degrees F.
In a medium bowl, combine shortening, butter, sugar, brown sugar, eggs and vanilla. Beat well.
Mix in oats and allow to moisten.
Sift together flour, soda, baking powder and salt. Add to dough and mix well. Stir in raisins, nuts and coconut.
Use tablespoon to spoon dough on to cookie sheet.
Bake at 375 degrees F for 15 to 20 minutes.
Dough can also be make into large rolls and chilled or frozen. Slice and bake when needed.
Enjoy!
TIP: Dough can be frozen to keep up to one month. Form dough into a roll, wrap in plastic and cover with foil before placing in freezer.
