Ingredients
3 cups flour
2 1/2 teaspoons cinnamon
1 1/4 teaspoons ginger
1 1/4 teaspoons allspice
1/2 teaspoon nutmeg
2 teaspoons baking soda
1 1/2 teaspoons salt
2 cups granulated sugar
1 can (15oz) pumpkin
4 large eggs
1 cup vegetable oil
1/2 cup orange juice
1 cup sweetened dried cranberries (can use fresh or frozen)
Preheat oven to 350 degrees F. Grease and flour two 9 x 5 inch loaf pans. Combine flour, cinnamon, ginger, allspice, nutmeg, baking soda, and salt in a large bowl. In a separate bowl, combine sugar, pumpkin, eggs, oil and orange juice. Beat just until blended. Add pumpkin mixture to the dry ingredients and stir until just moistened. Fold in cranberries. Spoon batter into greased and floured loaf pans.
Bake for 60 minutes or until inserted wooden toothpick comes out clean. Cool in pans on wire racks for ten minutes; remove loaves to wire racks to cool completely. Makes 2 loaves. Enjoy!
