Pumpkin Coffee Cake Eater!

Just like Peter, you'll love this Pumpkin Coffee Cake.
Moist and delicious...mmmm!



Ingredients

1 1/2 cups sugar
3/4 cup butter
2 eggs
3/4 cup sour cream
1 cup pumpkin
1 teaspoon vanilla
2 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves

***Filling***

4 tablespoons sugar
1/2 cup pecans, finely chopped
1 teaspoon cinnamon

Preheat oven to 350 degrees F. Grease and lightly flour Bundt pan.

Cream together sugar and butter. Add eggs one at a time mixing well after each addition. Add sour cream, pumpkin and vanilla, beat well.

In a seperate bowl, combine flour, salt, baking powder and spices. Add to batter a little at a time and mix well.

In a small bowl stir together 4 T. sugar, pecans and 1 tsp. cinnamon to make the filling.

Spoon about half the batter into the bottom of the Bundt pan. Using a spoon, smooth the batter up the sides of the pan to make a trough in the batter. Spoon the filling into the trough. Spoon in the rest of the batter on top and sprinkle with remaining filling.

Bake for 1 hour.
