Dutch Raspberry Apple Pie
A perfect mixture of tart and sweet...dutch crumble tops it all off. My daughter Sami says, "Skip the dinner lets get to the pie".
Ingredients
*One 9" Crust*
1 cup all-purpose flour, sifted
1/4 tsp. salt
1/3 cup shortening
3-4 Tbls. cold water
* Filling*
3 cups peeled, cored and sliced tart apples
1/2 cup sugar
2 tbls. flour
1/2 tsp. cinnamon
2 cups fresh or frozen(thawed and drained) raspberries
1/3 cup crumbled almond paste
*Topping*
1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup cold butter
1/2 cup sliced almonds or chopped pecans
Pre-heat oven at 350 degrees F.
To make crust, mix flour, and salt in a meduim bowl, cut in shortening until crumbly. Add 3 to 4 tbls. of cold water and stir, roll out dough on a flour surface til 1/4 " thick and place in a 9" pie plate.
To make filling, in a large bowl, mix apples, sugar, flour, and cinnamon. Spoon filling onto prepare crust, sprinkle with raspberries and then with the almond paste over top of filling; set aside.
In a medium bowl combine sugar, flour, cinnamon, and cut in butter with a fork or pastry blender until crumbly, stir in almonds (or pecans). Sprinkle over top of almond paste.
Bake for 1 hour (be careful not to over bake). Serve warm or cooled. Enjoy!
