Peach Huckleberry Cobbler or
Peach Blueberry Cobbler

Peach Huckleberry Cobbler is a Pacific Northwest treat.
What? No huckleberries?...Blueberries are the perfect substitution.
Warm peach berry cobbler....Delicious!



Ingredients

5 to 6 large fresh peaches, sliced
1/2 cup fresh huckleberries
1 tablespoon fresh lemon juice
1/4 teaspoon almond extract
1 cup flour
1 cup sugar
1/2 teaspoon salt
1 egg, beaten
1/2 teaspoon vanilla
1/4 cup butter

Preheat oven to 375 degrees F. Place peaches on bottom of buttered medium sized baking dish. Combine lemon juice and extract and sprinkle over peaches.

Sift together dry ingredients. Add beaten egg and cut into dry ingredients with pastry cutter until crumbly. Sprinkle mixture over peaches. Dot with butter.

Bake at 375 degrees for 40 minutes.
