Orange Muffins
with Dates and White Chocolate Chips

Orange, Dates, and White Chocolate make these orange muffins a sweet temptation. Follow our easy to make recipe, add your families favorite add- ins. Try nuts, mini dark chocolate chips, cranberries, whatever sounds good!



Ingredients

2 cups all-purpose flour
1 Tbl. baking powder
1/2 tsp. salt
2 large eggs
1/2 cup milk
1/2 cup granulated sugar
1/2 cup fresh orange juice (from 1 large naval orange)
1 Tbl. fresh grated orange zest (from the same orange)
1/4 cup vegetable oil
1/4 tsp. pure orange extract (optional)
1/2 cup white chocolate chips
1/2 cup snipped pitted dates

Note: You may substitute white chocolate chips and dates for the same amount of desired additions)

Pre-heat oven at 400 F. Prepare standard size muffin tins with paper liners or grease bottoms only of muffin tins . Recipe makes 12 to 14 muffins

In a large bowl, whisk together flour, baking powder, and salt; Set aside.
In a medium mixing bowl whisk eggs, add milk, sugar, oil, orage juice , orange zest, and orange extract if desired; Stir in white chocolate chips and dates.
Make a well in the flour mixture and pour in egg mixture into the well, stir carefully and only until dry ingredients are moistened.
Fill muffin cups immediently with about 1/4 cup of batter, (cups should be about 2/3 full).
You can also sprinkle a few chips or nuts to the tops of each muffin if you like.
Bake for 20 minutes or until toothpick comes out clean. Let muffins cool in pan for 2 mintues then remove them to finish cooling on wire rack. Enjoy!
