Elaine's Lemon Bread

An anytime favorite!
This mouth-watering lemon bread goes great on a warm afternoon with iced tea.



Ingredients

1/2 cup butter, softened
1 cup granulated sugar
2 large eggs
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. lemon zest =(grated rind of 1 lemon)
1 tbl. fresh lemon juice
1/2 tsp. pure lemon extract (optional)
1/2 cup milk

Glaze

1/4 cup powdered sugar
1-2 tbls. fresh lemon juice

Preheat oven at 350 F.; Grease 1 loaf pan; Set aside.
In a medium mixing bowl cream butter and sugar with an electric mixter on medium speed, add eggs one at a time, blend in well.
In a small bowl combine flour, baking powder, and salt.
Beat dry ingredients into butter mixture alternately with milk, add lemon zest, lemon juice and optional lemon extract.

Spread into prepared loaf pan and bake for 1 hour and until toothpick comes out clean.
Cool on rack, and make glaze; In a small bowl whisk powder sugar and 1-2 tablespoons of fresh lemon juice until smooth, pour or spoon immediately over cooling bread.
Loaf makes about 8-10 slices. Enjoy!
