Perfect Pecan Sandies

So delicious you won't be able to stop with just one!



Ingredients

2 cups flour
1 cup pecans
1/2 teaspoon baking powder
1/8 teaspoon salt
1 cup butter
1/2 cup sugar
1 egg, beaten
2 teaspoons vanilla

In food processor, combine cup pecans and 1/4 cup flour. Blend in food processor until smooth. Combine pecan mixture with remaining flour in small bowl. Mix in baking powder and salt.

In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Gradually, add dry ingredients to the creamed mixture.

Chill in refridgerator for 1-2 hours. Form balls and place on ungreased cookie sheet. (I like to use a cooking stone). Flatten balls slightly with thumb or back of spoon.

Bake at 375 degrees for 10 minutes or until golden brown. Carefully remove from cookie sheet and cool 10 to 15 minutes.

Makes about 3 dozen cookies. Enjoy!
