Mmmmm...Rich, Delicious Chocolate Mousse Cake
My friend Pat loves to serve this chocolate mousse cake. At the first bite guests pause...absolutely heavenly!
Ingredients
7 oz. bitter sweet chocolate (the finer the chocolate, the better the cake)
1 stick unsalted butter
3 eggs at room temperature
2 tablespoons flour
2/3 cups sugar
1/4 cup powedered sugar
1/2 cup freshly whipped cream
shredded chocolate
Preheat oven to 400 degrees F. Butter a 9x5x3 loaf pan. Warm 4 cups water and set aside for bain-marie (a water bath for cooking delicate foods).
In double boiler, with simmering water, melt chocolate and butter with 2 teaspoons water. when melted, remove pan with chocolate and let cool breifly.
In medium bowl, beat eggs, flour and sugar at medium speed until light and a pale color. Add melted chocolate and blend well. Mixture will be runny.
Pour batter into buttered loaf pan and place loaf pan in rectangular glass baking dish. Place dish with loaf pan in oven. Carefully pour warm water for bain-marie in glass dish to about 1 inch depth.
Bake for 30 minutes and check. If browning too quickly, tent with foil. Bake additional 10 minutes. Total baking time should be 40 minutes.
Top will be crunchy and inside will be very moist. Remove loaf pan from water bath and place on cake rack. Cake can be served slightly cooled from oven or at room temperature. Sprinkle with powdered sugar. Spoon into dessert cups and serve with freshly whipped cream topped with shaved chocolate.
