Banana Snack Cake



Our banana snack cake recipe is quick and easy to make.
The kitchen fills with the yummy aroma of of ripe bananas and sweet brown sugar that will set your mouth watering. Pack banana snack cake in kids lunches for a special sweet surprise!



Ingredients

3 cups all-purpose flour
2 tsps. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 cup softened butter (1 stick)
2 large eggs
1 cup granulated sugar
1/2 tsp. vanilla extract
1/4 tsp. almond extract
1 cup sour cream
2 cups mashed bananas ( about 4 medium )
1 cup white chocolate chips
2/3 cups chopped walnuts or nuts of your choice
3- 4 Tbls. brown sugar
1/4 -1/2 tsp. cinnamon

Preheat oven at 350 F. grease on1 13 x 9 x 2 baking dish;Set aside.
In a large mixing bowl, cream butter and sugar with an electric mixer on medium speed, add eggs one at a time. Beat in extracts.
In a medium bowl whisk together flour, baking powder, baking soda, and salt; Set aside. In a small bowl mash bananas and stir in sour cream, add this mixture to the butter mixture alternately with the flour mixture beating with an electric mixter just until moistened. Stir in white chips. Pour into prepared baking pan.
In a small bowl stir chopped nuts, brown sugar and cinnamon together, sprinkle evenly on the top of cake. Bake for 30 minutes. Check if done, toothpick should have little crumbs attached.
