ingredients

1 1/4 cups cake flour
1/2 tsp. salt
3/4 tsp. baking powder
5 ounces of unsweetened chocolate
1 Tbl. cocoa powder
3/4 cup butter
2 1/4 cups granulated sugar
4 large eggs
2 tsps. vanilla
1 cup coarsely chopped and toasted walnuts or pecans (optional)

This will be easy, but they're a couple of must dos through out the recipe!

First make sure the rack in your oven is placed in the center position.
Preheat at 325 f. Also line a 9x13 glass baking pan with foil leaving excess on the egdes so that you will be able to lift them out of the pan after cooling; next lightly grease the foil; set aside.
In a double boiler with slightly simmering water, melt butter ( cut butter into chunks), unsweetened chocolate ( also chopped into small pieces) and 1 tbl. cocoa powder melt until smooth and then remove from heat.

In a small bowl mix cake flour, salt and baking powder together ; set aside.
Add the sugar to the chocolate and butter mixture gradually. Add eggs one at a time until mixed completely, Stir in vanilla.
Add flour mixture to the chocolate mixture in about 3-4 parts at a time mixing in until combined. Pour into prepared pan and top with toasted nuts.
Note: toasting the nuts makes them crunchy and more flavorful, avoid just stirring them into the batter this can make the nuts soggy and change the texture of the brownies.

Bake for 25-30 minutes; keep watch at this point so not to under cook or over cook. Insert toothpick you want there to be some moist crumbs attached, thats perfect!
Remove from oven and let cool on wire rack for 1-2 hour before cutting into 2-3 inch pieces.
