Good Morning!
Your family will smile when waking to the warm sweet smell
of these blueberry muffins.

Ingredients

1/4 cup softened butter
1/3 cup sugar
1 egg
2 1/3 cups all-purpose flour
4 tsps. baking powder
1/2 tsp. salt
1 1/4 cup milk
1 tsp. vanilla
1 1/2 cup fresh or frozen blueberries

Streusel Topping

1/2 cup sugar
1/3 cup flour
1/2 tsp. cinnamon
1/4 cup cold butter

Preheat oven at 375. Grease and flour muffin pan; set aside. In a large mixing bowl , cream butter and sugar. Add beaten egg, mix well. In a separate bowl combine dry ingredients, flour, baking powder, and salt. Add dry ingredients to creamed mixture alternating with milk until moistened (batter will be stiff.) Stir in vanilla. Fold blueberries in gently avoiding over mixing and discoloring batter; set aside.

Meanwhile, fill 12 muffin cups two-thirds full. In a small bowl, combine sugar, flour, cinnamon, and cut in butter until crumbly. Sprinkle over tops of muffins. Place in oven and bake for 25 minutes and until lightly browned. Enjoy!
