Elegant Black Bottom Cupcakes

Rich, chocolate and delicious! These Black Bottom Cupcakes are my good friend Karen's family recipe and they are to die for! You too will be thanking her for this delicious treat.

Ingredients

8 oz. package cream cheese
1 egg beaten
1 cup chocolate chips
3 cups flour
1/2 cup cocoa
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
2 cups water
2/3 cup oil
2 tablespoons vinegar
2 teaspoons vanilla

Icing

1/2 cup butter
1/2 cup crisco
1 cup sugar
1 teaspoon vanilla
3/4 cup hot milk

Preheat oven to 350 degrees and prepare muffin tin with paper cupcake liners. Combine cream cheese, egg and 1 Tablespoon sugar in small bowl and mix by hand. Stir in chocolate chips. Set aside.

Sift together flour, cocoa, sugar, baking soda and salt in medium sized bowl. Add water, oil, vinegar and vanilla. Beat well. Fill muffin tins/papers 1/2 to 3/4 full. Drop 1 tablespoon of the cream cheese mixture on top of chocolate batter.

Bake for 20 minutes.

For icing, cream together butter and crisco until fluffy. Add sugar and vanilla and beat well. Add warm milk, a little at a time, and beat well.

Frost cupcakes when cooled.

Delicious!

Note: These cupcakes freeze well if unfrosted. Freeze remaining icing seperately. When ready to use, defrost cupcakes and icing. Beat defrosted icing with mixer at medium speeed until it is smooth and spreadable.
