Black and Blueberry Cobbler
Indredients
1 cup all-purpose flour
1/2 granulated sugar
1 tsp. baking powder
1/4 tsp salt
1/4 tsp. cinnamon
dash of nutmeg
2 large eggs, beaten
2 Tbl. half-and-half
2 Tbl. vegetable oil
2 cup fresh or frozen blueberries
2 cups fresh or frozen blackberries
3/4 cup water
3/4 cup granulated sugar
1 tsp. grated orange peel
Pre-heat oven at 375 F. Grease a 2 1/2 quart casserole dish.
In a medium bowl, wisk together flour, sugar, baking powder, salt, and cinnamon and nutmeg.
In a small bowl beat 2 eggs, add half and half and the oil, mix together well. Stir into dry ingredients with a rubber spatula just until moistened.
Pour into prepared casserole dish; Set aside.
In a medium sauce pan, add berries, water, sugar, and orange peel. Cook over meduim heat until berries come to a boil, stir occationally and continue the boil for 1 minute. Pour immediately into casserole (berries will be liquidity); Bake covered for 35- 40 minutes.
Let cool , serve warm with vanilla ice-cream or top with whipped cream. Makes 8 to 10 servings.
