Bessie's Banana Muffins

Banana Muffins just like Grandma used to make.
Simple, moist, and delicious.



Ingredients

6 large ripe bananas, mashed (best done in blender)
2 eggs
1/2 teaspoon salt
1 1/4 teaspoon baking soda
1 cup sugar
1 teaspoon baking powder
1/4 cup butter, softened
1 cup pecans or walnuts (optional)
1 1/4 cups flour

Preheat oven to 375 degrees. Mix together all ingredients except the flour. Gradually add the flour, stiring gently.

Spoon batter into well greased muffin tins. Bake 15 to 20 minutes until golden brown.

Makes about 2 dozen muffins.

Yum!

Note: Overripe bananas may be frozen in skins and saved to use for baking at a later date.
