Nana's Banana Bread

Go Bananas!
This banana bread recipe can be doubled to make two loaves.

Ingredients

1/3 cup shortening
1/2 cup sugar
2 eggs
1 cup mashed bananas (about 3 medium)
1 tsp. vanilla
1 3/4 cup all-purpose flour
1 tsp. Baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 chopped nuts (optional)
1/2 chocolate chips (optional)

Preheat oven at 350. Grease one loaf pan. In a large mixing bowl, cream shortening and sugar. Add eggs; mix together well. In a separate bowl mash bananas add vanilla; set aside. In a small bowl combine dry ingredients, flour, baking powder, soda, salt. Add dry ingredients to shortening mixture alternating with bananas until well combined. Fold in nuts or chocolate chips if desired.

Pour into loaf pan and bake for 50-55 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from pan;Cool completely on a wire rack. One loaf serves about 8 to 10. Enjoy!
