Old Fashioned Apricot Squares

Treat your tastebuds with our sweet and tangy apricot squares. Delicious with coffee or tea.



Ingredients


***Filling***
1 1/2 cups choped dried apricots
3/4 cups sugar
1/4 teaspoon salt
1/4 teaspoon ginger
1 cup water

Combine ingredients in saucepan. Bring to boil and then simmer about 20 minutes, stirring occasionally, until thickens. Remove from heat and let cool.


***Dough***
1/2 cup brown sugar, firmly packed
1/2 cup butter
1 3 oz. package cream cheese
1 cup all purpose flour, sifted
2 tablespoons water
1 1/3 cups old fashioned oats

Preheat oven to 350 degrees. Beat together brown sugar, butter and cream cheese until smooth. Add flour and mix together until smooth. Stir in water and oats.

Spread one half of dough in bottom of greased 9" x 9" baking dish and form remaining dough into ball. Chill dough in refrigerator.

Spread thicked filling over chilled dough. Roll out remining dough on waxed paper into a 9" by 9" square. Place dough on top of filling.

Bake at 350 degrees for 30 minutes. Sprinkle bars with powdered sugar.

Delicious served warm or cooled.
