MMMMmmmm, Apricot Coffee Cake!

The fruity goodness of sweet apricots and the rich flavor of almonds will make this apricot coffee cake a favorite at your house.

ingredients

1 3/4 cup all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon
1/8 tsp. ground ginger
1/4 tsp. almond extract
1 egg, beatened
1/2 cup chopped dried apricots
1/2 milk
1/2 cup sugar
1/3 cup oil

2-3 tbls. apricot preserves
2-3 tbls. sliced almonds, toasted

Preheat oven 350 f. grease one 8 inch cake pan; set aside. In a medium mixing bowl beat egg and add snipped or chopped dried apricot. Stir in milk, sugar, oil, and almond extract; set aside.
In a medium bowl stir together flour, baking powder, salt, and spices. Stir in apricot mixture all at once to the dry ingredients until combined.
Pour into prepared pan and bake for 20-25 minutes or until toothpick comes out clean.
Cool for 10 minutes on a wire rack; then spoon apricot preserves evenly on cake, top with the toasted almond slices. ( you can toast nuts quickly on top of stove in a fry pan over low heat and tossing nuts in pan frequently.)
Serve warm. Makes 10 pieces.
