Glazed Apple Bread

Apple Bread warm from the oven, this cozy autumn treat is a favorite at our house!

Ingredients

1 1/2 cups tart apples (about 2 large) , peeled and shredded
1 cup packed brown sugar
1/2 cup buttermilk
(substitute= 1/2 cup milk with 1 1/2 tsp. lemon juice let stand 5 minutes)
1/2 cup vegetable oil
4 large eggs
3 cups all-purpose flour
1/2 chopped pecans
2 tsps. baking soda
2 tsps. cinnamon
1 tsp. salt
1/2 ground nutmeg

Glaze

2 Tbls. butter
1/4 cup packed brown sugar
1 Tbl. milk
1/2 cup sifted powdered sugar

Pre-heat oven 350. Grease bottoms of two loaf pans, set aside. In a large bowl, stir together apples, brown sugar, buttermilk, oil, and eggs. In a smaller bowl combine dry ingredients, flour, nuts, soda, salt, and spices. Stir dry mixture into apple mixture until ingredients are moistened. Pour into pans, bake for 45-55 minutes or until toothpick comes out clean. Cool on wire rack for about 10 minutes. Loosen sides of bread with knife, remove from pans and cool completely.

Meanwhile in a small sauce pan, melt butter over medium heat. Stir in brown sugar and bring to a broil, stirring constantly; reduce heat to low, continue to boil and stir for two minutes. Stir in milk and return just to a boil; remove from heat and cool to luke warm (about 20-30 mins.) Gradually stir in powdered sugar a little at a time into glaze mixture, beat with spoon until smooth and thin enough to drizzle. Drizzle desired amount over loaves. Loaves will serve about 16-20 slices. Enjoy!
