Linda's Almond Toffee
I love this toffee!
This almond toffee is the perfect gift to share with friends and neighbors. It is easy to make, tastes absolutely wonderful and looks beautiful wrapped up in cellophane and a bow.
My friend shared this almond toffee recipe with me. It is simple, delicious and will delight your guests every time.
Ingredients
1 cup sugar
1 cup butter
3 tablespoons water
1 cup chocolate chips
1/4 cup almonds
Prepare a cookie sheet covered in foil or waxed paper. Set aside.
Place butter, sugar, and water in a medium sized sauce pan. Cook over medium heat stirring constantly. Mixture will begin to bubble and become yellow and foamy. Continue stirring as it becomes a frothy yellow. Keep stirring until the mixture becomes a caramel brown color.
Drop a small piece of mixture in a cold cup of water. Test toffee...if crunchy it is ready. If chewy, continue cooking and stirring over medium heat for a minute, then test again. Total cooking time is about 8-10 minutes.
When toffee is ready, pour the toffee mixture onto the cookie sheet, spreading toffee to about 1/8 inch thickness.
Pour chocolate chips over the hot toffee. Use a spatula to spread chocolate across toffee as chips melt until the toffee is covered.
Sprinkle almonds over the chocolate. Gently press the almonds into the chocolate.
Place cookie sheet with toffee in refrigerator until completely cool - 2 to 3 hours. NOTE: Do not freeze - chocolate with separate from toffee.
When cool, break toffee into serving size pieces - about 2" each.
