Nuts for Almond Butter Cookies

Almond Butter Cookies

These rich delicious almond butter cookies will soon become a family favorite. Made just like peanut butter cookies but with almond butter. Delectable and Different!

Ingredients

1/2 cup softened butter
1/2 cup almond butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1/4 tsp. pure almond extract
1 1/4 cup all-purpose flour
1 tsp. baking soda
****optional add ins****
1/2 cup white chocolate chips
sliced almonds garnish for tops

Preheat oven at 350 F. In a medium mixing bowl, cream butter, almond butter, and sugars with an electric mixer on med-low speed until well blended. Add egg and almond extract continue mixing.

In a small bowl whisk flour and baking soda together then add to butter and sugar mixture, blend with mixer on med-low speed until flour is completely blended.
Stir in white chocolate chips if desired.
Using a tablespoon, spoon a level tablespoon of batter onto a ungreased cookie sheet, slightly flatten cookies with a fork making criss-cross impressions.
Bake for 12-15 minutes and until lightly browned. Makes 24-28 cookies.This recipe can be doubled if needed.

Note You may also garnish tops of cookies with some sliced almonds if desired, just press almonds into tops of cookies slightly before baking.
If you are unable to find almond butter yet at your local store, you can substitute it for peanut butter and the almond extract for 1/2 tsp. vanilla.
